Like the meat fabrication class, this class will show you how to buy whole fish and cut what you need off, what can be done with leftovers, and finer points to buying whole seafood.  Learn proper cleaning techniques when dealing with mollusks and shellfish.  Maybe you've cleaned a fresh water fish, but have you cleaned a large saltwater fish before?  Think it's the same, well take our class and see for yourself.  The best way to learn is to grab the fish by the gills and just go for it!
